About this item
Pale pink-white fillets with a fine grain running the length of the flesh and a thin band of darker muscle along the centre line. The flavour is clean and mild with a faint sweetness, and the texture stays firm enough to hold its shape whether you sear it hard in a pan, bake it under a crust, or slice it thin to eat raw. Season lightly - salt, lemon and a little olive oil is about all it wants.
