Long, translucent strips of meat taken from large razor clams, each one carrying a bright orange band of roe through the centre. The flesh is firm and slightly springy when raw, then turns tender and sweet the moment it meets heat. Rinse them briefly, then steam with ginger and a splash of rice wine, drop them into a hot wok, or grill them in the shell over charcoal. The roe is the richest part - do not discard it.
